I was thrilled to take to the kitchen with Rachel Khoo for Rachel Khoo's Kitchen Notebook Melbourne, in which I cook with her my twist on a retro classic. I appear in the second episode, which showed on SBS last night. She asked me to do a spin on a Margaret Fulton dish, so I did a contemporary take on my grandmother's Coronation Chicken. You may remember the dish as a soggy insipid thing, maybe with pureed apricot and mayonnaise. Well this is nothing like that. My mother made Coronation Chicken for her wedding breakfast in the 1970s, and it was a spectacular platter scattered with almonds and spiked with spice. This version is a snacky, canape version, where you top crisp pappadams with with textured, crunchy chicken salad and top with spiced almonds and sesame seeds. Would love to hear your thoughts...
