coconut blueberry smoothie & a giveaway

I never thought I'd give up on green (read all colours of the rainbow) smoothies for breakfast. For a while there I was doing one every morning, shoving kale and fresh coconut, grapefruit and kiwifruit, cucumbers and ginger in my blender like a fresh fruit and veg monopolist. And then it got cold, freezing, and I needed all the soft boiled eggs on toast, on avocado toast, on sautéed kale with fresh grated turmeric I could get as the first meal of the day. As the season becomes more friendly every day, I'm slowly slowly reaching for the blender again, stocking up on coconut water and frozen berries in lieu of actual summer berries. I'm not heading straight for the veg-only options yet, but wanted something gentler to get me ready for the summery onslaught of truly pure green smoothies. Coconut or Greek yoghurt additions help with this, and I use coconut water instead of water if I've been clever enough to have stocked some in my fridge. Recipe here...!

This morning I did a blueberry, LSA and coconut number that I had to share with you. Basically, it's this:

Coconut blueberry smoothie

  • 1/4 cup frozen blueberries

  • 330ml coconut water

  • 2 tbs LSA (linseed, sunflower seed and almonds ground up)

  • 2 tbs coconut or Greek yoghurt

  • 1 tsp maple syrup, if liked

Combine ingredients in blender and blend, then drink and feel marvellous.
